Hello everyone, I’m Madeline Light!
Espresso Thyme began with my love for coffee and the belief that slowing down leads to better things.
Coffee has always been a part of my life; my mom is a coffee lover, and she is one of the reasons why I fell in love with the science & romance of coffee. I’ve been a barista for 4 years, learning more about the craft of espresso and the community formed around it. I’m so proud to be a part of it. The people who come and stay, tell their stories, and build relationships with you are one of the things I’m most excited about having Espresso Thyme. The sense of community and grounding I witness in cafés and shops around the country makes me excited to create unique solidarity in Utah. Espresso Thyme is designed to feel relaxed and thoughtful, inviting people to pause, connect, and let themselves just be.
Our Values
Espresso Thyme is a specialty coffee cart serving artisan espresso, customizable drinks, and teas. Earth is our inspiration. Rooted in intentionality, warmth, and craft, Espresso Thyme offers freshly roasted coffee every day. From carefully sourced beans to small-batch roasting and thoughtful service, everything we do is intentional.
Coffee has always been a gathering point. At Espresso Thyme, we believe some of the most meaningful moments happen around a shared cup and experience. Whether we’re serving at a market, an event, or a quiet corner of the day, our goal is to create space for conversation, presence, and connection—coffee that brings people together, wherever they are.

Consistency and care are very important to us, making sure each Espresso Thyme adventure is full of kindness. We cater to anyone's needs, allergies, and/or preferences. We are the coffee shop that remembers your order and your name when you come more than once:)
Roasting Philosophy
Coffee is agricultural, seasonal, and alive. We roast with that in mind.
Espresso Thyme works exclusively with specialty-grade coffees—beans cultivated with care, harvested thoughtfully, and sourced through transparent, ethical relationships. Roasting in small batches allows us to adapt to each coffee’s unique personality, rather than forcing it into a uniform profile.
Our approach favors patience over production, clarity over bitterness, and craftsmanship over shortcuts. It’s a slower way of doing things—but one that creates a better cup and a deeper connection to where it came from.

What’s Next
Espresso Thyme is just getting started—growing slowly, serving intentionally, and always prioritizing the craft.
For now, our focus is simple: continue learning, roasting with intention, and showing up in our community—one cup at a time.
We’re beginning as a mobile coffee cart, serving at local events, markets, and gatherings where good coffee belongs outdoors and among people. As we grow, we hope to expand our offerings, deepen relationships with producers, and keep refining our craft without losing sight of what matters most.
This isn’t about growing fast. It’s about growing well.

We choose coffees for balance, sweetness, and character—working with trusted importers who prioritize ethical sourcing.
Every coffee we choose meets SCA specialty standards and comes from producers who prioritize quality, sustainability, and fair compensation. Our small-batch roasting approach allows us to fine-tune each profile, preserving origin character while developing balance and depth.
Rather than masking flavor, we aim to reveal it—honoring the craft of the farmer and the natural complexity of the bean. The result is coffee that feels honest, traceable, and thoughtfully made.
Because when time is treated as an ingredient, the cup speaks for itself.
